Ingredients This meal was delicious! It took some prep time but it comes out really good. For potato & carrot gratin with parmesan and fresh thyme. 2 russet potatoes, peeled and grated 2 medium carrots, peeled and grated 1/3 medium yellow onion, grated 1/2 can cannelloni beans, drained and rinsed 1/2 cup parmesan cheese, grated 4 ounces low fat, part skim ricotta cheese (we like to add an extra scoop or two) 1/4 teaspoon kasher salt 1/4 black pepper 1/2 tablespoon of fresh thyme leaves, roughly chopped 1 tablespoon olive oil Serve with a side salad | Nutritional Information Potato & carrot gratin with parmesan and fresh thyme Calories: 252 kcal Protein: 12 g Fat: 9 g Sugar: 3.6 g |
