DIRECTIONS
For Spring fricassee Heat a large, heavy bottom Dutch oven or a large soup pot over medium heat and add in the oil. Add garlic, potatoes, onion, leeks, carrots, beans, thyme, paprika, salt and pepper to the pot. Stir to combine and allow the vegetables to sweat until tender and translucent, about 1 minute. Pour in the broth and cover with a lid, bring to a boil, and then reduce the heat to low and simmer. You are looking for the liquid in the pot to be making small bubbles.
